Georges became a professional mixed martial artist at the age of 21. At the time, he had already earned his black belt in Kyokushin Karate. On January 25, 2002, at UCC 7: Bad Boyz, he faced Salvadoran-Canadian fighter Ivan Menjivar in his first professional mixed martial arts match.

He fought for the UCC Welterweight Championship against defending champion Justin Bruckmann at UCC 10: Battles. He made his UFC debut against Karo Parisyan at UFC 46 on January 31, 2004, winning by unanimous decision. In his next fight, he faced Jay Hieron at UFC 48. After dominating his opponent from the start, he won the first round by technical knockout. He faced his first major opponent in his third UFC fight. Matt Hughes was already a well-known figure in the sport when George was rising through the ranks. They fought for the vacant UFC Welterweight Championship at UFC 50 on October 22, 2004.

Matt caught his opponent in an armbar and tapped him with only 10 seconds left in the first round, despite holding his own against a much more experienced opponent for the majority of the fight. Later, he admitted that defeating Matt was the best thing that could have happened to him at the time. Two years later, at UFC 65, he would face Matt again, and this time he would prevail.

He defeated Hughes by technical knockout in the second round to win the UFC Welterweight Championship. He was defeated for the second time in his career in his tenth UFC fight. Matt was defeated and lost the welterweight title in the second round. He faced Jon Fitch in his first title defense after reclaiming it. He eventually defeated Michael Bisping at UFC 217 to reclaim the UFC Middleweight Championship. Furthermore, he resigned after 34 days because he had ulcerative colitis and didn’t want to slow down the division.
